Tax Rates are allocated to Items and Fixed Price Menus on Spoonfed.
Go to Setup - Organization - Tax Rates to manage Tax Rates.

For some Customers, you need to override the Standard Tax Rate.
To do this, first find the Customer.
Select View/Edit.
In the Customer Details Tab, scroll to the bottom of the page. Find Sales Tax Override.
Click the box to see a list of options. Select the desired Tax Exempt (or a different desired Tax Rate) to make this the default when a Customer places an order.
Click Save Customer.
You'll need to have Tax Exempt saved as an option within your Tax Rates on Setup.
Note that past Orders will not be changed. You can edit past Orders manually within the Individual Order page.
